Egg Bread Upma


Ingredients :
  • Bread - 6 slices (Brown or White)
  • Egg - 5
  • Onion - 1 medium size (finely chopped)
  • Green chili - 3 chopped
  • Curry leaves - 4 to 6
  • Coriander leaves - for garnishing
  • Turmeric powder - a pinch
  • Urad dal - 1/2 tsp
  • Oil - 2 tbsp
  • Salt - to taste


Method :
1.Cut the bread into small pieces. Break the eggs into a bowl then add salt (to taste),turmeric powder and beat well.
2.Heat oil in a pan, add Urad dal, green chili, curry leaves, add little amount salt and fry it until the onions becomes light golden brown color.


3.Now add bread pieces into the pan mixture and mix it well.


4.Then add the egg little by little and stir it well. Do not add egg fully to avoid sticking together.


5.keep the flame very slow and allow it for few minutes. Finely add coriander leaves and serve hot.

Gobi Manchurian

Gobi Manchurian 


Sakthi's Special

Ingredients :
  • Cauliflower - 1 medium size
  • Oil - for deep frying


 For the batter :
  • All purpose flour (Maida) - 2/3 cup
  • Rice flour/Cornflour - 1/2 cup
  • Red chili powder - 1 tsp
  • Ginger & Garlic paste - 1 tsp
  • Salt - to taste 
  • Pepper - to taste



For the Sauce :

  • Spring onion white & green part - 2 tbsp each finely chopped
  • Capsicum - 2 tbsp finely chopped
  • Garlic - 1 1/2 tbsp sliced thin
  • Big onion - 1 cut into small pieces
  • Soy sauce - 1 tbsp
  • Tomato ketchup - 2 tbsp
  • Chili sauce - 1/2 tbsp
  • Vinegar - 1 tsp
  • Food color - small pinch (Optional)
  • Salt & Pepper - to taste                                                                                                                     



Method :
1.Boil cauliflower florets in salted water over medium flame for 2-4 minutes. After boiling , drain excess water and pat dry florets on tissue paper.


2.For the batter mix all ingredients together and add water as required to make thick batter. (not running consistency).Add all florets in batter and mix it well.


3.Heat oil in frying pan over medium flame. Carefully drop 5 to 8 florets in oil and deep fry until they turn golden brown. Drain and transfer deep fried florets over the tissue paper in to a plate. Deep fry remaining florets.

Methods for Saute :
1.Heat oil in a flat pan and to this hot oil add garlic and followed by spring onion white part,onion and capsicum.

2.Saute for a minute and then add all sauces - Soy sauce, Tomato ketchup, Chili sauce and Vinegar, mix it well and saute for a few minutes till sauce thickens.


3.Add salt and pepper to taste . Taste the sauce before adding salt as the sauces too have some salt in them hence adjust to taste.
4.Add deep fried florets with the sauce. Stir fry for 2 or 3 minutes on hot flame till the florets get well coated with sauce.

5.Finely garnish with some spring onion green part and serve hot.

  • If you like colorful one add food color as need.

Carrot Halwa

Carrot Halwa


Ingredients:

  • Carrot grated - 2 cups
  • Milk - 1.5 cups
  • Sugar - 1/4 cup
  • Ghee - 1 tbsp.
  • Cashew nuts - 1/2 tbsp.
  • Cardamom powder - small pinch

                    


Method:

1. Peel the skin and grated the carrots. Heat the thick bottomed pan , add 1 tbsp. of ghee and roast the cashew nuts till light brown and keep them aside in a bowl.


2. Add the grated carrot in the same pan and fry for few minute.

3.Add the milk and allow it to boil. And cook it covered for 5-8 minutes till the carrot gets cooked.


4. Continue to cook till the milk completely evaporates. Add the sugar get dissolved and add cardamom powder.


5.Finely garnish with nuts and serve warm or cold.

Bread Pudding

Bread Pudding


Ingredients:

  • Bread - 5 slices (cut into a small pieces)
  • Butter - 3 tbsp
  • Cinnamon powder -1/2 tsp
  • Raisins - 1 tbsp (optional)
  • Eggs - 3 
  • Milk - 2 cups ( warm milk)
  • Sugar - 5 tbsp
  • Vanilla extract - 1 tsp


Method:

1. Cut the bread slices into small pieces and keep it aside.
2.Add butter to the warm milk bowl and mix it well.
3.Now take the another bowl and add egg,sugar,cinnamon powder and vanilla extract then mix it well.
4.Add this mixture to the warm milk mixture and mix it well.

5. Spread the bread slices in the microwave bowl then sprinkle the raisins over the bread pieces. Now pour the warm milk + egg mixture over the bread slices.

6.Now bake it in 350F pre-heated oven for 45 minutes or until it is done.

 7. Serve warm or chilled.

Potato Cheese Balls

Potato Cheese Balls

Ingredients:


  • Potatoes-3 large boiled and mashed
  • Peas      - 1/2 cup 
  • Spring onion- 1 chopped
  • Tomato ketchup- 1 tbsp
  • Cornflour- 2 tbsp
  • Salt- to taste
  • Mozzarella cheese- as needed cut into small cubes
  • Bread crumbs- 1 cup
  • Oil- deep frying
  • Pepper Powder- to taste





Method:

==> Heat oil in a kadai . Add in spring onion , peas and saute for a minutes.

==> Add tomato ketchup , salt and pepper to taste and mix well.

==> Add in potatoes and mix well. Allow this to cool down. Divide this into equal portions.

==> Take one ball and stuff it with small piece of cheese in the center and cover from all sides. Do the same to every balls.

==> Mix cornflour with some water to form a thin liquid. Take breadcrumbs in a plate and set aside.

==> Now take the cheese stuffed ball and dip them in cornflour liquid and then roll them tightly in breadcrumbs. Do the same way to every balls.

==> Now heat oil for deep frying and fry these balls till golden brown. To serve with ketchup.

Banana Bread Cake

Banana Bread Cake






    Ingredients:
  • Maida                 -  1 cup
  • Banana                - 1 ripe
  • Egg                      - 2
  • Granulated Sugar  - 1/2 cup
  • Butter                 - 1/2 cup
  • Walnut                - 3 tbsp
  • vanilla essence     - 1/2 tsp
  • Salt                     - 1/4 tsp






Method:

==> First Mash the banana well and set aside. In a wide bowl butter ( at room temperature) and sugar, beat well.
==> Once the sugar is completely blended with the butter and the eggs and beat it well until fluffy. Add vanilla essence, mix once.
==>  Now add the mashed banana, salt and mix well. Add the flour in portions and mix well until combined well. Finally add in the chopped walnuts.
==>  Pre-heat oven 350F for 10 minutes. Meanwhile grease the pan and after the preheating time, pour the butter into greased pan and bake it for 40-45 mins.
==> Test by inserting a fork/knife in the middle of the bake, if it comes out clean then your cake is ready.Completely cool then cut into slices and serve.
